You’ll go nuts over this cheese-less cheesy sauce! If you want to elevate that steamed broccoli dinner add some cashew cheese sauce! If you want a divine dip for healthy homemade chips or fries… add some cashew cheese sauce! I’ve even turned this into a delicious curry by adding chopped cashews, raisins, herbs and spices. It was to die for and looked great in photos!

Recently, I decided to ditch processed foods in my quest for better health. I used to love buying vegan junk because it was super convenient and I felt good supporting some amazing vegan + gluten-free brands. But this became a habit which led to some severe food addictions and a worsening mental and physical state. Before you get all concerned, just know I already went through the worst of it and emerged victorious with much more clarity about myself.

I don’t need to be perfect to advocate health, I just need to be me! So the new me is prioritizing REAL food made in my own kitchen. You’ve probably already noticed an increase in my recipe posts lately and this is exactly why! I’m now broadening my horizons by dipping my toes into recipes outside of sweets, even though I have plenty more of that in-store.

So here is my not so cheesy “cheese” sauce. Read on to learn how easy it is to make this vegan oil-free recipe and keep it handy so you can avoid all those store-bought products with nasty additives and preservatives.

INGREDIENTS:

  • 2 cups raw cashews
  • 3 cups of filtered water
  • 1 large potato, diced
  • 1 carrot, diced
  • 1/2 small onion, diced
  • 2 tsp turmeric
  • 1 tsp garlic powder
  • 1 tsp cayenne
  • 2 tbsp lemon juice
  • 2 tsp sea salt
  • 1 tsp black pepper

DIRECTIONS:

  1. Soak cashews in water overnight or rinse with hot water for several minutes.
  2. Meanwhile, add the measured water (3 cups) to a medium-sized pot and place a steaming basket in it.
  3. Add in the diced potato, carrot and onion, cover and cook for 25-30 minutes on medium-high heat until the veggies are completely soft.
  4. Remove from heat and set aside the steaming water.
  5. In a blender or food processor blend the rinsed cashews with the steaming water until smooth.
  6. Next add the cooked potatoes, carrots and onion in with turmeric, garlic powder, cayenne, lemon juice, sea salt, pepper and the steaming water.
  7. Blend until well incorporated.
  8. Serve and enjoy!
